We continue from L’Arte di Mangiare in Italy.
Cuisine Classique takes Germany’s usual spot during Festival of the Arts.
Every item on the menu returns from last year.
Red Wine-braised Beef Short Rib with Parsnip Purée, Broccolini, Baby Tomatoes, and Aged Balsamic – $8
You’ll receive two sizable chunks of tender beef that resemble stew meat a little more closely than your typical, high-end short rib. This is one example where the vegetable sides may eclipse the headliner, with incredibly juicy tomatoes and broccoli that retains a little bit of a crunch on top of the silky parsnip, which is a little sweet without the starch of your typical potato. It’s a relatively sizable portion, but I would have liked to have seen a higher quality piece of meat used. Eight dollars is about what you would pay for Canada’s Filet during Food and Wine and this is considerably lower quality.
Seared Corvina with braised Ratatouille and Lemon-Thyme Beurre Blanc – $7.50
The corvina is a firm, mild, slightly sweet fish with a firm texture and a nice flaky quality. The sauce is elegant and nuanced with a little bit of a tart flavor that’s offset by the herbs.
The vegetables hold up nicely and carry the same thyme flavor from the fish with a little bit of rosemary, garlic, and basil. There’s also quite a bit of attention to detail with the fish placed delicately on top of the hearty ratatouille. The portion size is about what you would expect, though the nearly-$8 ask seems a little high. We should probably get used to it.
Saint-Honore Tart: Caramel Cream Tart with Caramel Glaze topped with Cream Puffs – $6
This was really good. The tart itself has a bold, sweet caramel flavor with a little bit of a crunchy crust encapsulating the creamy custard. The puffs on top combine a decadent cream with a little bit of chocolate and a chewier exterior along with the unadvertised puff pastry cookies that are delicately placed in the tart. It’s one of the better desserts at the Festival and a good value overall.
A Play on Rosé Flight with Angry Orchard Rosé Hard Cider, Concrete Beach Brewery Rosé Ale, Frozen Rosé – $10.50
This pairs three very different, very pink beverages that each arrive in a 4-ounce cup.
The Cider is very drinkable, sweet up front with a tarter aftertaste. There’s a floral quality about it with a nice juiciness throughout the sip. I wouldn’t drink these by the bottle, but it’s a good option to try as part of the flight.
The Rosé Ale tastes much more like a carbonated wine, which I think is going to turn off both wine drinkers and beer drinkers alike. I enjoy both, but this tastes like someone found a few leftover drinks after a party, poured them together, and called them an Ale. There’s a strange tannin structure going on and a lingering sour flavor, neither of which I’m looking for in a beer.
The Frozen Rosé is offered in this flight in a 4-ounce cup or by itself in a 6-ounce cup for $6.50. It’s light, fruity, and refreshing with what is likely a low alcohol content. It ends up being just about as inoffensive as possible.

I’d probably opt in favor of the larger size over the flight if you’re not curious about the other two Rosés.
Overall, Cuisine Classique would be a solid booth at any other Epcot Festival, but is just a middling entry for the Arts. Each item is somewhere between just below average to just above average on value with nothing particular standing out so much that it’s worth going out of your way to try. The dessert is very good, but so are a dozen others.
