In my first couple years of decorating I did a royal icing tiara to put on top of my daughter's 1st bday smash cake :) I loved it more than she cared about it at the time lol she would appreciate it more now! Last year she got the whole princess castle cake and the year before was Belle. I'm no expert, I just took the 3 wilton classes and had an amazing instructor give me all kinds of tips and tricks. I am THE worst critic on my own cakes, I only have a couple that I'm actually proud to show off lol

I'm self-taught--took one Wilton class after I already had a couple cakes under my belt and just didn't mesh well with it--but I have learned a LOT just from Cake Central and some great cake sites.
My tips (not that I'm a cake genius or anything, but I have a fair amount of experience) are to drop everything and make a meringue buttercream (I like Swiss meringue buttercream) if you're not already because it is easier than you'd think and makes me want to smack myself for EVER making American buttercream and to try ganache under fondant. I can do many cool things with my cakes, but I was never 100% happy with my fondant until I started using ganache. :)
Ahhh I'll have to find a recipe for that, my recipe has meringue powder but I'm not sure it's anything like what you're talking about. I'm always up for trying new recipes. I still haven't found the "perfect" ones for me yet lol I've been asked to do a wedding cake this spring...I've already turned down a few, just not confident enough for something that important. I'm still not 100% sure but I think this one will be ok though, 3 tiers basic with some piping.

American buttercream contains powdered sugar. Meringue buttercreams are based on creating a meringue and then adding other ingredients. The one I use is really simple: 6.25 oz. egg white, 1 cup sugar, pinch salt, 1 lb room temp butter (soft enough that you cannot pick up a piece), flavoring. You mix the eggs, sugar, and salt in a double-boiler or, if you don't have one, mix in a stainless bowl that fits well on top of a saucepan containing approx 1" of boiling water. Whisk constantly to avoid making scrambled eggs, and cook until mixture becomes very foamy and creates a fair amount of steam (there's a specific temperature you're looking out for, but I don't use a candy thermometer--I just eye it). Remove bowl from heat and beat (if you don't have a stand mixer, it won't be AS easy but will still work) on high until stiff peaks form. Add entire amount of butter at once and mix (use your paddle attachment on a stand mixer) until well-blended. Mixture may appear as though it has separated (mine has never done this but it happens to some) but will come back together if you keep mixing. Add flavoring to taste. Use immediately or refrigerate.
This is not a crusting buttercream, so be aware. I do not cover my cakes with it as I use ganache under fondant exclusively, but I use it between layers or for cupcakes and it is just lovely. It sets up hard in the fridge, which makes it ideal for decorating and using under fondant, and will return to its lovely texture once brought back to room temperature. It is a very poor glue, however, and should not be used to secure cake boards to your cakes or for any other purpose--use royal icing or a bit of melted chocolate for this instead.

I have a wonderful husband of 20 years who is a financial consultant and tolerates my Disneyworld obsession. Our sons are 18 and 19 and are both in school in Tampa. My daughter is 13 and I quit my job as a teachers aide at Christmas to start homeschooling her.
We have been blessed to go to Disney regularly since the first time we took the boys in 2000. Probably 8 or 9 weeks on site and an extra couple days before our DCL cruises. My husband is a huge fan of the cruises and we just took our fifth over New Years. My name is Chris (short for Christopher - I was named after the 80's actress Christopher Norris - CRAZY mom!) I am married to Joel, my hubs of almost 4 years. We are originally from Texas but currently living in Virginia for Joel's job. I am a registered nurse working in the OB/GYN field and full time student with plans to become a nurse practitioner when I grow up.
I am a Disney lover, obviously, and my husband claims he could take it or leave it but he changes his tune when we are actually at the parks. I went to Disney World once as a kiddo, like age 3 or 4, and Disneyland once when I was 10 or so. My family always had plans to return but life got in the way. My husband, sister, and I made it back to Disney in 2008 and again as a couple in 2011.
Our September 2013 trip is extra special for several reasons. For starters, it's an all girls trip including my sister Rachel, my mom Suzanne, our former German exchange student turned honorary sister, Alex, and myself! Plus it will be my mom's first trip back to Disney in almost 20 years!! This trip is also for my mom's 50th birthday!!! Oh... and it's a complete SURPRISE!!!! If all goes as planned my mom will be flying to my home in Virginia to spend her birthday week with her daughters and will be surprised seeing Alex here and then surprised again with a trip to Disney World. Woot!
So, that's about it for me. I have been lurking for a while and finally decided to join. I look forward to getting to know everyone.

Hi, My name is Melissa. I am from RI and I teach 2nd grade. We are heading to WDW in 44 days! The last time I visited was over 26 years ago and this is DS (4 yr old) very first trip. I guess I should have checked for an introduction thread before I posted the first time. Better late than never. Hi everyone, I'm Liz. I first went to WDW in 1981 and didn't get the chance to go back until 2003. DH and I went with another couple who had gotten married there a few years prior. We went back again in 2008 with our DD8 (then 4) and again in 2011 with our DD3 (then about 20 mos). We're going back the first week of April and I'm really looking forward to the absence of diapers and naps. I don't post very often, but I'm here every day reading.
Oh, yay! I didn't think to look for an introduction thread. I'm Christa. First went to WDW in 1993. Didn't go back until 2006 and now I'm hooked. We've been every year since and have a trip scheduled for June. My cast of characters include my husband and our 12 year old son, both Disney freaks.

I'm Catherine. The last time I was at WDW was in the mid-90s for a high school band trip. Went once before with my Aunt, Uncle, cousin, other cousin and her husband when I was around middle school age. Going this fall with my parents (they went for the first time a few years ago for 3 days and fell in love with it) and my Gram (who went for her honeymoon with her second husband way back in the early 80s). So this is the first time we'll all be going together. I've never stayed on site before but my parents insisted after having such fun when they went. They stayed at Port Orleans. With Gram's mobility issue we made ease of travel our biggest priority after getting villa. So we're splurging and staying at BLT. I have a small heart-attack whenever I look at the package price.
It is funny that the thing I really remember about WDW was the monorail. It is right up there with being on Haunted Mansion with my cousin and when the back of our buggy was facing my Aunt and Uncle's buggy he reach over and smacked ours scaring us worse than anything on the ride. I really find it odd that the monorail is such a huge memory. Especially when it went through the Contemporary.
Dad's favorite thing was going Trick or Treating at MNSSHP so we're definitely doing MVMCP this year. He wasn't the biggest Disney fan before thier trip but Disney magic really made him a believer. The first thing he said when they got back was that he wanted to go again and for longer.
I've gone a bit Disney insane since I started planning this last July. I got a countdown to Disney calendar as soon as we decided on a date. Only 277 more days to go! So close considering I started counting down at over 400.

Recently bought into DVC about two years ago and love it! We try to visit Disney at least twice a year, but airfare prices sometimes make it difficult.We live in New Jersey and do not do well driving that far.recently found this site on Allears which is also very informative with great people.
