I think the later breakfast is always a winner. It lets you RD, get a few things done, have a nice air-conditioned break while you eat, and then continue on...

Will your break on day 2 include a swim? If so, the BBB make-over prior would probably not be a great idea. Just as an idea, (and I am not sure of your other ADR plans) if you did it on day 1,...

Also - Cape May at the Beach Club is a nice breakfast buffet with Minnie, Goofy and Donald...

ETA: and if you plan it well, having a late breakfast (10:30-ish) you may get a little bit more time...

I'll agree with PP, zoos and AK are very different! AK has so much more! Great shows (Lion King and Nemo), some fun rides (Safari!) Please don't ignore it thinking it's just a zoo :)
